Kombucha & Scoby
Kombucha: A green or black tea, which has gone through careful fermentation. Kombucha offers health benefits when drank consistently. Kombucha can be experimented in so many different ways: flavors, tea, fermentation process, second fermentation process, etc. Kombucha needs to be cared for cautiously; for if flies, temperature, or mold contaminates the fermentation process everything needs to be thrown out.
Scoby: Symbiotic culture of bacteria and yeast. A scoby produces a mixture/juice known as 'starter' that is what ferments with the tea. Scobys reproduce by providing a thin layer at the top of the jar so the fermentation process is not harmed. The scoby does not only reproduce once... it does it a lot. The scoby has to be covered by thin cloth because mold will cover the top layer and ruin the whole batch (Look up: "what do I do if my kombucha has mold on top"). Scobys can grow by from raw kombucha with sugar and tea but they will be tiny scobys. |
